Ingredients:

1 – Medium ripe mango (cubed) (about 2 cups)

¼ – Cup red onion (finely chopped)

2 – Tablespoons pablano, chili, or jalapeno pepper (finely chopped with seeds removed)

1 – Small red pepper (finely chopped) (about ¼ cup)

2 – Teaspoons finely chopped cilantro

½ – Teaspoon lemon or lime juice

Directions:

Mix all ingredients together, tossing gently so as not to break down the mango.  Put in an airtight container and place in refrigerator until chilled.  Please note that the salsa is better the longer it sits and the flavors can meld together.
