  1. Do you mean why don’t we wait for the kettle to cool down inatesd of pouring the water through the teaware? Two reasons! First, pouring the water through the teaware preheats it and prevents the tea in the cups from cooling off. Secondly, we tend to boil about 1.5L of water at once for the second, third and fourth infusions. If we waited for the kettle to cool down enough for the first infusion, it would be too cold for the next ones. Thanks for your question!
